I want to start by saying this was a crazy unique experience. Well worth the money,(and I dont take that lightly) very informative, and an incredibly intimate ambiance with maybe 6 tables underground in a cellar, quite honestly. chocolate eery few minutes while you dine.

The Fabullus Wine Cellar in Trastevere serves both as a local hang-out and a stop for those travellers in search of more than a glass on the run. Situated in a first century roman cistern this locale marries “Slow Food” approved delicacies with great wines resulting in a tasting that you won’t forget after you leave the eternal city.
Fabullus Wine Cellar is found at Via dell’Arco di San Calisto 20 in the cellar of an 18 th -century building in Trastevere, the historic heart of Rome, one of the capital’s oldest and most characteristic districts. It’s only a short walk from all the famous photogenic cobbles and squares.
Fabullus is built around exactly that question. Everything from the cured meats, to the cheese, to the pizza originates from small makers that qualify for the slow food presidium; men and women who still bake and cure and create using ancient methods as opposed to large-scale factory productions, a concept which actually tastes Roman in its true spirit.
Get one glass of prosecco with two white Italian and red Italian wines. Selection of cold cuts, mortadella with pistachio, seasoned & fresh cheeses, buffalo, riccotta, vegetables in oil, Roman pizza, 3 breads, olives, jam, honey and end with a dessert or ice cream.
It’s essentially a stamp of approval for small, artisan producers guarding against the extinction of recipes, native breeds and local ingredients: basically your salami, cheese, bread or olives were made as they’ve been made for generations, which is probably the best way to experience Italian food and wine without setting foot near a supermarket.
Groups are usually up to 20 people and for bigger parties start time and menu can often be changed on request. If you’re planning something for a work trip, reunion or wedding party, it’s definitely worth contacting ahead of time as their favourite slots do get booked.
Absolutely! You don’t have to be a sommelier to get the most out ofFabullus. There will be guides who show you the wines and describe the wine to food pairing as the meal progresses. The Informal layout will ease the virgin tasters at first time, but the range of regional Italian wine is more than satisfactory for any avid vino buffs out there.
Instead of restaurant to restaurant, attempting to cobble together a mash-up of Italian food, one guided tasting such as this allows you to sample dozens of regional specialties, the better to compare and contrast side by side, with an expert available to explain what you’re drinking and the subtle nuances of its pairing.
Sessions typically start at 11:00, 13:00, 15:00, 17:00, or 19:00, giving you flexibility whether you’re squeezing it into a morning of sightseeing or winding down before dinner. Larger groups can sometimes arrange custom timing, so it’s worth asking if none of the standard slots fit your schedule.
Roman ingredients dominate The tasting menus will offer tastes such as Roman pizza and breads, Italian cheese and cured meats, oil, vegetables and many other regional specialties. The a la carte menu will also pull from around Italy, allowing guests to eat authentic Roman food and wine in Rome and still taste the many flavors the country has to offer outside of one region.
Guests are usually welcome to purchase bottles of or goods which they particularly enjoyed. Ask a member of the staff when you’re there, however, not all can be kept as well for a shop and it changes every season.
Reservations are advised as most of the tasting time slots get booked up quite early. As it’s a seated and guided tasting and not a walk up bar, they’ll do their best to plan the wine, food and pairings based on numbers so you avoid any disappointment at the door.
If you’re short on time during your Rome trip, it’s possible to experience a wide variety of local cheeses, cured meats and a wine pairing in one Fabullus’ setting over the course of an hour, right underground in a very real Roman-style cistern. That’s as efficient as you’ll be getting your fill of regional bites while trying to stay on a schedule you simply don’t have.
So your group sizes can’t technically be that big before we call this a function, for example, 20+ people we definitely recommend calling or emailing rather than trying to squeeze in an online. This way the team will know exactly when you have planned and can cater for you a bit more!
Trastevere’s piazzas, churches, and evening wine bars are all within easy walking distance, so a tasting here fits naturally into a longer stroll through the neighbourhood and honestly one of the reasons it doubles as the best food and wine experience in Rome for many visitors. Many pair it with an afternoon wandering the district before or after their sitting.
